Winter apple cream

Ingredients for 15 servings:

  • 1 kg apples
  • 700 ml apple juice
  • 2 packets of vanilla pudding powder
  • 70 g sugar
  • 15 speculatius cookies
  • 1 cup of cream (200 ml)
  • some cinnamon or cocoa powder

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 30 minutes

Peel the apples and cut into small pieces. Boil 600 ml of the apple juice with the apple pieces until the apples have softened slightly. Mix the vanilla pudding powder and sugar with the remaining apple juice, then add to the hot apple juice mixture and bring to a boil according to the package instructions. Crumble the speculatius biscuits and divide them among 15 dessert glasses. Spread the apple cream on top and let it set in the refrigerator for at least 1 hour. Whip the cream until stiff and pour over the cream. Dust with cinnamon or cocoa powder, if desired.
