Chocolate mousse with Christmas flavor

Slowly melt the chocolate in a little cream, add the gingerbread spice. Soak the gelatin in water and melt in the microwave. Add it to the melted chocolate. Whip the cream until stiff. Whip the egg whites until stiff. When the chocolate melt has cooled to hand temperature, add the cream first, then the egg whites. Pour into a loaf pan and chill for 2 hours. Place the morello cherries and juice in a saucepan, bring to a boil, and thicken with cornstarch. Turn the mousse out onto a plate, garnish with chocolate sprinkles, and serve with cherries.
