Winter strawberry jam with a kick

Ingredients for 4 servings:

  • 900 g strawberries
  • 500 g gelling sugar 2:1, or 1 kg 1:1
  • 50 ml red wine
  • 3 tbsp Amaretto
  • 1 vanilla pod(s)
  • 1 tsp cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Puree the washed strawberries. If you prefer chunky jam, it’s sufficient to chop the strawberries into small pieces. Split the vanilla pod, scrape out the seeds with the back of a knife or a teaspoon, and add to the strawberries. Mix the cinnamon, red wine, and Amaretto into the fruit mixture and stir in the gelling sugar. Bring the mixture to a boil and simmer for 5 minutes, stirring constantly. Test for settling. Pour the boiling-hot jam into the prepared jars, immediately close the lids, and place the jars on the lids for about 2 minutes, then turn them upside down and let them cool at room temperature. Note: When prepared according to this recipe, the jam is very spreadable. If you prefer a really thick jam, reduce the amount of strawberries slightly. Due to the ingredients, it’s suitable not only as a spread but also for Christmas baking!
