Young Leaf Lettuce from Neighbour’s Garden – Appetizingly Arranged
The perfect young leaf lettuce from neighbour’s garden – appetizingly arranged recipe with a picture and simple step-by-step instructions.
For the marinade:
- 1 bunch Chives rings
- 2 tablespoon Potato salad – a leftover
- 2 Tomatoes
- 2 Hard-Boiled eggs
- 3 tablespoon Extra virgin olive oil
- 1 tablespoon Freshly squeezed lemon juice
- 0,5 teaspoon Sugar
- 1 pinch Salt
- 1 pinch Pepper
- 1 sheet Borage chopped
- 1 sheet Chopped parsley
- 1 sheet Lemon balm chopped
- 0,5 teaspoon Mild mustard
- First of all: I have a dear neighbor with an extensive vegetable garden, who every now and then brings me some of her wealth (my herb bed in front of the terrace is not a vegetable garden). Today it was this tender young leaf salad.
- Sort out the lettuce leaves, place in a bowl with cold water and gently agitate to wash. Lift it out again and repeat the process until the water stays completely clean. Then spin the leaves dry in the salad spinner.
- Place in a large serving bowl and sprinkle with some of the chives and place in the refrigerator until serving. Pour all the ingredients for the marinade into a screw-top jar and shake thoroughly; also place in the refrigerator until serving. Wash the tomatoes and cut each into 8 wedges.
- Peel the eggs and cut into sixths in the egg slicer. There was still a leftover potato salad, which I put in the middle of a large plate, put the tomatoes around it and sprinkled it with a few pieces of onion, pepper, salt and the remaining chives. I also added the egg slices.
- I only mixed the tender young lettuce with the marinade at the table and filled it over the arranged plates. There was also fresh baguette and a quick pan-fried turkey skewer from our poultry farm farmer.
- A vitamin-rich salad that became the main course with fresh bread and a piece of meat and was just the thing for a warm summer’s day.
