Zucchini and cheese skewers

Ingredients for 4 servings:

  • 350 g sheep’s cheese
  • 125 ml olive oil
  • 5 drops of lemon juice
  • 2 tsp oregano
  • 2 zucchini, evenly lengthened
  • 8 cherry tomatoes
  • 2 pita bread(s), toasted
  • tomato sauce

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 24 minutes

Cut the feta cheese into finger-thick cubes and place in a shallow dish. Combine the oil with the lemon juice, oregano, salt, and pepper, drizzle over the cheese, and toss to coat. Cover and chill for about 1 hour. Slice the zucchini lengthwise into thin strips. Wrap the cheese in the slices. Thread onto the skewers, finishing with a cherry tomato. Grill on the preheated grill for 3-4 minutes, turning occasionally, and brush with the remaining marinade. Serve with pita bread and tomato sauce.
