Zucchini and ham scrambled eggs on bread

Ingredients for 2 servings:

  • 4 slices of farmhouse bread or homemade bread
  • some oil
  • 1 small onion(s), finely chopped
  • 50 g ham, raw or cooked
  • ½ small zucchini, coarsely grated
  • 1 garlic clove(s), finely chopped
  • 1 sprig(s) rosemary, finely chopped
  • 3 eggs
  • 1 tbsp Parmesan, freshly grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

with salad a light dinner or for a small snack in between

Sauté the onions in a little oil. Add the ham and fry briefly. Add the zucchini along with the garlic and rosemary and fry gently for about 2 minutes. Beat the eggs, mix in the Parmesan cheese, and season with salt and pepper. Pour into the pan and let it set until creamy, stirring frequently. Toast the slices of bread or fry briefly on both sides in a little oil in the pan. Spread the scrambled eggs on the bread and serve immediately.
