Zucchini and raw ham fritters

Ingredients for 1 servings:

  • 120 g zucchini
  • 10 g onion(s)
  • 20 g raw ham, air-dried, in wafer-thin slices
  • 1 egg(s)
  • 30 g breadcrumbs (2 heaped tablespoons)
  • 15 g natural yogurt or sour cream (1 tablespoon)
  • 1 tsp vegetable oil
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash the zucchini, dry it, coarsely grate it, and place it in a bowl. Roll up wafer-thin slices of raw ham and finely chop them. Finely chop the onions. Place both in the zucchini bowl. Add the raw eggs and breadcrumbs. Add very little salt, if any, as the ham is already salty, and a little freshly ground pepper. Mix everything quickly, but don’t knead it, so the mixture doesn’t become watery! Brush a large pan with oil and heat it. Form the zucchini mixture into small patties, place them in the pan, and fry them over medium heat until golden brown on both sides. Enjoy the fritters topped with natural yogurt or sour cream.
