Ingredients for 4 servings:

  • 2 m.-large zucchini
  • salt and pepper
  • 1 small onion(s)
  • 100 g cooked ham
  • 1 tomato(s)
  • 125 g double cream cheese
  • 2 tbsp milk
  • 1 pkt. herbs, mixed, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

stuffed zucchini as a starter

Halve the zucchini lengthwise, scooping out some of the flesh with a spoon. Cook the zucchini halves for about 5 minutes, drain, season, and let stand for 15 minutes. Finely dice the onion and slice the cooked ham. Peel, deseed, and chop the tomato. Mix everything with the cream cheese and milk, season again, and stir in the frozen herbs. Stuff the zucchini halves with the mixture and place in a buttered baking dish. Bake in a preheated oven at 200°C (top/bottom heat) for about 20 minutes.
