Ingredients for 4 servings:
- 100 g spring onions
- 1 clove(s) garlic
- 400 g zucchini
- 4 tsp oil
- 500 ml vegetable stock
- 1 pinch(s) thyme
- 1 pinch of nutmeg
- salt and pepper
- 2 tbsp crème fraîche
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel and dice the onions and garlic. Coarsely grate the zucchini. Sauté the onions in the oil for 2 minutes over medium heat. Add the garlic and zucchini and sauté for 3 minutes. Pour in the broth, season with spices, and simmer for 4 minutes over low heat. Stir in the crème fraîche and purée the soup.
