Zucchini noodles with halloumi, pesto and tomatoes

Ingredients for 4 servings:

  • 1 kg zucchini
  • 250g halloumi
  • 1 small jar basil pesto
  • 250 g cherry tomatoes
  • oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Low carb, vegetarian, healthy

Halve the cheese and cut into approximately 1 cm wide slices. Fry the slices in a pan with oil for about 4 minutes on both sides. Remove from the pan and keep warm in the oven. Trim and wash the zucchini and cut into long strips using a vegetable peeler. Add the strips to the pan and fry in the remaining fat from the cheese for about 4 minutes, turning occasionally. Mix in the pesto, then add the cheese and tomatoes. Stir until the pesto has become liquid and is well blended with all the ingredients. 410 kcal per serving
