Zucchini parcels filled with feta

Ingredients for 2 servings:

  • 1 zucchini
  • ½ package of feta cheese
  • some olive oil
  • some pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

ideal for raclette or hot stone

Wash the zucchini, pat dry, and trim the ends. Then, using a vegetable peeler, slice the zucchini into thin slices. Cut the feta cheese into small slices, roughly the same width as the zucchini slices. Place a piece of feta cheese on each zucchini slice and roll the zucchini slice up lengthwise. Place the parcels on a plate, season with pepper (salt isn’t necessary, as feta is usually salty enough), and drizzle with a little olive oil. Fry the zucchini parcels on a raclette grill or hot stone for a few minutes on each side until they’ve taken on some color.
