Zucchini patties with ricotta

Ingredients for 4 servings:

  • 2 m.-large zucchini
  • 250 g ricotta
  • 1 large egg(s)
  • Breadcrumbs
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

Grate the zucchini and squeeze out any excess liquid. Combine the ricotta and egg and mix well with the zucchini. Then stir in the breadcrumbs until the mixture forms easily. Season generously with salt and pepper. Then form the patties, coat them in the breadcrumbs, and refrigerate for about an hour. Coat a frying pan well with oil and deep-fry the patties. These patties make a great side dish or for veggie burgers.
