Zucchini Soup
The perfect zucchini soup recipe with a picture and simple step-by-step instructions.
- 1200 g Zucchini
- 1200 ml Vegetable broth
- 2 Pc. Large onions
- 3 tsp Sage leaves (cut into strips
- Salt
- Black pepper
- Sweet paprika powder
- 6 tbsp Cream
- 4 tbsp Olive oil
- Peel the zucchini thinly and cut into large cubes. Peel and dice the onions. Heat the oil in a saucepan and fry the onion cubes until translucent. Add zucchini cubes and fry briefly. Then add the vegetable stock and let it cook until soft.
- Then pour in the cream and puree everything. Season to taste with salt, pepper and paprika powder. Finally sprinkle the sage leaves on top.
- If you like, you can add fried chicken breast pieces or strips of ham.
