Zucchini Soup

The perfect zucchini soup recipe with a picture and simple step-by-step instructions.

  • 1200 g Zucchini
  • 1200 ml Vegetable broth
  • 2 Pc. Large onions
  • 3 tsp Sage leaves (cut into strips
  • Salt
  • Black pepper
  • Sweet paprika powder
  • 6 tbsp Cream
  • 4 tbsp Olive oil
  1. Peel the zucchini thinly and cut into large cubes. Peel and dice the onions. Heat the oil in a saucepan and fry the onion cubes until translucent. Add zucchini cubes and fry briefly. Then add the vegetable stock and let it cook until soft.
  2. Then pour in the cream and puree everything. Season to taste with salt, pepper and paprika powder. Finally sprinkle the sage leaves on top.
  3. If you like, you can add fried chicken breast pieces or strips of ham.
