Zucchini with cheese and mushroom filling

Ingredients for 2 servings:

  • 2 zucchinis
  • 2 onions
  • 200 g oyster mushrooms
  • 1 bell pepper(s)
  • ½ cup cream
  • 80 g cheese, grated
  • salt and pepper
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut open and hollow out the zucchini. Peel and finely chop the onion. Finely chop the bell pepper and oyster mushrooms. Sauté the onion in butter. Add the mushrooms and bell pepper and sauté briefly. Stir in the cream and season with salt and pepper. Spoon the filling into the zucchini halves, sprinkle with cheese, and bake in the oven at approximately 170°C.
