Zuchini Stuffed with Minced Meat

The perfect zuchini stuffed with minced meat recipe with a picture and simple step-by-step instructions.

  • 1 piece Zuchini approx. 750 g
  • 350 g Mixed minced meat
  • 1 piece Onion, finely chopped
  • 1 toe Garlic, finely chopped
  • 1 piece Beefsteak tomato
  • 1 piece Small red peppers, finely chopped
  • 1 handful Italian herbs, finely chopped
  • 1 pinch Herbal salt and pepper
  • 1 tsp Sweet paprika
  • 180 g Freshly grated goat cheese
  1. Wash the freshly harvested zucchini, cut in half lengthways. and scoop out with a spoon. Season with salt and pepper.
  2. Fry the minced meat in hot olive oil, fry the onion, garlic and paprika. Cut the hollowed out zucchini meat into small pieces and fry briefly. Season with herb salt, pepper, paprika and herbs and mix in about half of the cheese.
  3. Fill the zucchini with the mixture and place on an oiled roasting dish. Cover with the tomato slices and sprinkle the remaining cheese. Bake at approx. 180 degrees top / bottom heat for 25-30 minutes. This goes well with ciabatta or baguette.
