Green tomatoes in oil

Ingredients for 4 servings:

  • 3 kg tomatoes, green
  • 500 ml water
  • 1 liter vinegar (table vinegar)
  • 3 tbsp salt
  • 3 tbsp sugar
  • 3 cloves garlic
  • e.g. oil (sunflower or rapeseed oil)

Working time approx. 1 hour; Total time approx. 1 hour

Green tomatoes for pickling, as antipasti or for snacks – very tasty!

Bring water, vinegar, salt, and sugar to a boil in a large pot. Cut the tomatoes into approximately 1 cm thick slices and blanch them briefly in the boiling liquid (1 minute). Remove with a skimmer and layer them in clean jars. Sprinkle finely chopped garlic between each layer of tomatoes. Finally, pour the oil over the tomatoes and seal the jars tightly. If kept refrigerated, the tomatoes will keep for several months.
