Apricot and strawberry jam with sherry

Ingredients for 1 servings:

  • 950 g apricot(s)
  • 350 g strawberries
  • 250 ml Sherry, medium dry
  • 700 g gelling sugar 2:1
  • 1 piece(s) fresh ginger (walnut-sized)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash, pit, and finely chop the apricots, then puree in a blender. Wash and finely chop the strawberries. Place the berries in a saucepan with the apricot puree, gelling sugar, and sherry, cover, and let stand for a while. Then bring to a boil over high heat while stirring, then simmer gently for about 4 minutes. Fill pre-boiled jars with the jam to the brim, seal the jars immediately, and let them sit with the lids on for a few minutes.
