Ingredients for 1 servings:

  • 2 eggs
  • 180 g sugar
  • 60 ml rum
  • 250 g yogurt (strawberry)
  • 90 ml vegetable oil
  • 280 g flour
  • 1 packet of baking powder
  • some powdered sugar for dusting

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Combine the eggs, sugar, rum, and yogurt in a bowl and mix together. Slowly add the oil while stirring. Sift the flour and baking powder over the mixture and mix everything together. Pour the batter into a greased springform pan and bake in an oven preheated to 180°C for about 35-40 minutes. Remove from the oven, let cool, and dust with powdered sugar before serving. Tip: During strawberry season, I spread the cake with whipped cream and top it with strawberries. Depending on the season, the fruit and yogurt can be swapped out as desired.
