Mushroom sauce

Ingredients for 2 servings:

  • 200 g fresh mushrooms, e.g. button mushrooms, chanterelles or a mushroom mixture
  • 300 ml vegetable stock
  • 1 m.-sized onion(s)
  • 1 ½ tbsp oil
  • 2 tbsp flour
  • some salt and pepper
  • possibly herbs

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Vegan mushroom sauce – goes well with pasta, vegetable stir-fries or potato rösti

Peel and finely dice the onion. Clean the mushrooms and slice or chunk them. Heat the oil and sauté the mushrooms and onions. Dust with flour and deglaze with the broth. Bring to a boil briefly, then simmer gently for about 15 minutes. Season with salt and pepper and add herbs, if desired. If you prefer a creamier sauce, you can purée it.
