Tomato-Mozzarella-Zucchini-Parma Carpaccio

Ingredients for 1 servings:

  • 1 ball of mozzarella
  • ½ zucchini
  • 1 large tomato(s)
  • ½ package of Parma ham
  • 2 cloves garlic, pressed
  • some lemon zest
  • 3 tbsp balsamic vinegar
  • some Parmesan
  • salt and pepper
  • Herbs, Italian
  • 6 basil leaves

Cut the zucchini, tomato, and mozzarella into thin slices, and tear the Parma ham into roughly the same size pieces. Arrange these four ingredients in a row on a plate. For the sauce, mix the balsamic vinegar with the garlic and drizzle over the rows. Season to taste with salt, pepper, and Italian herbs. Finally, grate the lemon zest, grate the Parmesan into medium-sized pieces, and sprinkle both over the dish along with the basil leaves. If you don’t like garlic, you can omit it or use just one clove. Using light mozzarella and lean prosciutto, the dish is also suitable for WW.
