Basic recipe for Gugelhupf

Ingredients for 1 servings:

  • 100 g sugar
  • 1 egg(s), separated
  • 125 ml milk, 0.1% fat
  • 50 g butter, semi-skimmed
  • 100 g quark, semi-skimmed
  • 250 g flour
  • ½ pkt. vanilla sugar
  • ½ tsp baking powder
  • ½ pinch(s) of salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

for a 16 cm baking pan

Separate the egg. Place the egg white in the refrigerator with 1/2 pinch of salt. Whisk the egg yolks and sugar until fluffy. Add the softened half-fat butter, half-fat quark, and milk, and continue whisking. Combine the flour with the baking powder and vanilla sugar and add to the mixture. Finally, beat the egg whites until stiff and stir into the mixture. Pour the batter into the pan and bake at 180°C (convection oven) for about 28 minutes. Do the toothpick test.
