Spaghetti with tomato sauce, pak choi and sausage

Ingredients for 3 servings:

  • 400g spaghetti
  • 300 ml tomato sugo (salsa di pomodorino) or pureed tomatoes
  • 300 g pak choi
  • 150 g sausage
  • 1 m.-sized onion(s)
  • 6 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the spaghetti in salted water according to the package instructions. In the meantime, cut the onions and sausage into small cubes. Remove the stalk from the bok choy and cut the bok choy into strips of about 5 mm. Set the white part of the bok choy and the leaves aside. Heat the salsa di pomodorino slowly; seasoning is not necessary for this sweet tomato sauce. The passata should be seasoned. Heat half of the olive oil and fry the onions with the sausage for about 4 minutes. Then remove the onions and sausage from the pan. Heat the second half of the oil and first sauté the white part of the bok choy, which has been cut into strips. After about 3 minutes, add the finely chopped leaves and sauté for a minute. Now stir in the onions and sausage. Drain the spaghetti, put it in a bowl and toss with the tomato sauce. Serve the spaghetti in portions on plates and top with the bok choy, onions, and sausage. If you want, you can sprinkle Parmesan cheese on top.
