Stuffed potato patties

Ingredients for 4 servings:

  • 600 g potatoes, floury, cooked
  • 180 g flour
  • 20 g semolina
  • 1 egg yolk
  • 1 pinch of salt
  • 250 g ham and sausage leftovers, mixed
  • ½ small onion(s), finely chopped
  • 1 clove(s) garlic, finely chopped
  • 1 tbsp parsley, finely chopped
  • some flour
  • 2 eggs, whisked
  • breadcrumbs
  • Clarified butter, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the filling, chop the ham and leftover sausage into small pieces. Mix well with the chopped onion, garlic, and parsley. For the potato dough, peel the boiled, hot potatoes and press them through a potato ricer. Quickly knead them with flour, semolina, egg yolk, and salt to form a dough. Then shape into an oblong roll and divide into 8 equal pieces. Flatten each piece of dough on a lightly floured surface and cover with about 2 tablespoons of the filling. Fold the potato dough over the filling, press the edges firmly together, and form into patties. Coat the potato patties first in a little flour, then in the beaten eggs, and finally in the breadcrumbs. Heat the clarified butter and fry the patties slowly until golden brown. Serve with salad.
