Pork fillet in puff pastry

Ingredients for 3 servings:

  • 1 pork fillet(s)
  • 300 g puff pastry
  • 1 egg yolk
  • Thyme
  • pepper, black
  • Sea salt, coarse

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

from the grill

Trim the pork fillet and season with pepper and sea salt. Then cover and sprinkle with thyme on all sides. Roll out the puff pastry and wrap the pork fillet in it. Brush the ends and overlaps with egg yolk (as a glue). Trim any excess puff pastry and use it as decoration. Preheat the grill to 180°C – 200°C and cook the pork fillet indirectly for approximately 35 – 45 minutes (until the puff pastry is golden brown).
