Zucchini parcels with minced meat filling

Ingredients for 4 servings:

  • 2 zucchinis
  • 400 g minced meat
  • 500 ml tomato(s), pureed
  • 1 shallot(s)
  • 1 egg(s)
  • 3 tbsp breadcrumbs
  • 4 stalks of thyme
  • 4 sprigs of oregano
  • 200 g jasmine rice
  • some salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 15 minutes

Peel the shallot and then chop finely. Rinse the thyme, spin dry, and chop. Rinse the oregano, spin dry, and chop. Wash and trim the zucchini, then use a vegetable peeler to slice or slice lengthwise into thin strips. Mix the minced meat, shallot, oregano, thyme, breadcrumbs, egg, and a little salt and pepper to make a mince mixture. Lay two strips of zucchini crosswise and place some of the mince mixture in the middle. Then fold the zucchini strips upwards, press down lightly, and secure with toothpicks. Place the passata in a baking dish, season with salt and pepper, and then place the zucchini parcels in the dish. Cook the rice in salted water according to the package instructions. Place the baking dish in a preheated oven and let the parcels cook for about 30 minutes at 180°C. Arrange rice on plates, pour the tomato sauce over it and place some zucchini parcels on top.
