Sausage salad in green

Ingredients for 4 servings:

  • 350 g ham sausage, sliced
  • 100 g tongue sausage, sliced
  • 1 onion(s)
  • ½ cucumber(s)
  • 1 small zucchini
  • 3 pickles
  • 1 egg(s), hard-boiled
  • 1 tbsp soy sauce
  • 3 tbsp apple cider vinegar
  • 4 tbsp sunflower oil
  • 2 tbsp mineral water, medium
  • salt and pepper
  • some chives
  • Salad herbs

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cut the sausage into thin strips and place in a large bowl. Peel and finely dice the onion, then add it to the bowl over the sausage. Finely dice the gherkins and add them. Season with salt, pepper, and salad greens. Add the vinegar, oil, soy sauce, and mineral water and mix well. Peel the cucumber, halve it lengthwise, remove the seeds with a teaspoon, cut into small cubes, and add to the salad. Wash and dry the zucchini, halve it, scoop out the insides with a teaspoon, dice it finely, and add to the salad. Peel the hard-boiled egg, cut it lengthwise and crosswise into cubes, and add to the salad. Mix carefully and let the sausage salad sit for a good hour before serving. Sprinkle with a few chives before serving. A hearty loaf of farmhouse bread goes perfectly with this.
