Bread / Rolls: Spelled Apple Bread

The perfect bread / rolls: spelled apple bread recipe with a picture and simple step-by-step instructions.

  • 200 g Wholemeal spelled flour
  • 200 g Spelled flour type 630
  • 100 g Wheat flour type 550
  • 1 packet Natural sourdough liquid in a bag
  • 0,5 cube Yeast fresh
  • 10 g Salt
  • 100 ml Lukewarm water
  • 3 piece Grated apple
  1. Mix the types of flour with the salt. Crumble the yeast and add to the flour together with the sourdough.
  2. Mix well. Now add the grated apples and keep stirring.
  3. Now slowly pour in water in small portions. Keep stirring vigorously (kitchen machine) and immediately stop adding water as soon as the dough comes off the bowl.
  4. Knead for another 7-10 minutes.
  5. Cover the dough (in a bowl) with a hot, damp cloth and let rise overnight at room temperature.
  6. The next day, generously sprinkle a glass dish (with a lid) with flour – so that you don’t need a chisel after baking – and put the dough, which is shaped into a ball, in it.
  7. Sprinkle with a little flour and make a cut.
  8. Bake in the preheated oven at 220 degrees for about 30 minutes with the lid closed.
  9. Reduce the temperature to 200 degrees, remove the lid and bake for another 20 minutes. Put a bowl of water in the pipe and spray or brush the bread with salted water.
