Jacket Potatoes with Carrot and Apple Quark

  • 600 g Waxy potatoes
  • 200 g Lowfat quark
  • 1 tbsp Rapeseed oil
  • Salt and pepper
  • 130 g Carrots red
  • 100 g Apples red
  • 0,5 bunch Chopped parsley
  1. Cover the potatoes in a saucepan with water and cook over medium heat for about 20 minutes. Mix the low-fat quark with the rapeseed oil, season with salt and pepper. Peel the carrots and core the apples. Grate both coarsely. Chop the parsley leaves. Mix everything with the quark. Drain the potatoes and let them evaporate briefly. Serve with the quark.
