Potato and Bean Tortilla

The perfect potato and bean tortilla recipe with a picture and simple step-by-step instructions.

  • 600 gr Waxy potatoes
  • 1 bunch Spring onions
  • 1 Red Bell pepper
  • 1 Can Kidney beans 425ml)
  • 2 tbsp Oil
  • Salt, pepper, noble sweet paprika
  • 3 Eggs
  • 125 ml Milk
  1. Wash the potatoes and cook for about 20 minutes. Quench, peel and let cool.
  1. Clean and wash the spring onions and peppers. Cut spring onions into rings, peppers into strips, rinse beans and drain well. Cut the potatoes into slices.
  1. Heat the oil in a pan with a lid. Fry the potatoes in it. Season with salt and pepper.
  1. Add spring onions, beans and peppers to the potatoes and fry for about 5 minutes. Season with salt and pepper.
  1. Mix eggs and milk. Season with salt, pepper and sweet paprika. Pour egg milk over the potatoes and cover and let stand for about 10 minutes over low heat.
  1. Herbal quark tastes good with it.
