Ingredients
 

  • 600 gr Waxy potatoes
  • 1 bunch Spring onions
  • 1 Red Bell pepper
  • 1 Can Kidney beans 425ml)
  • 2 tbsp Oil
  • Salt, pepper, noble sweet paprika
  • 3 Eggs
  • 125 ml Milk

Instructions
 

  • Wash the potatoes and cook for about 20 minutes. Quench, peel and let cool.
  • Clean and wash the spring onions and peppers. Cut spring onions into rings, peppers into strips, rinse beans and drain well. Cut the potatoes into slices.
  • Heat the oil in a pan with a lid. Fry the potatoes in it. Season with salt and pepper.
  • Add spring onions, beans and peppers to the potatoes and fry for about 5 minutes. Season with salt and pepper.
  • Mix eggs and milk. Season with salt, pepper and sweet paprika. Pour egg milk over the potatoes and cover and let stand for about 10 minutes over low heat.
  • Herbal quark tastes good with it.
