Oatmeal Cookies with Coconut

The perfect oatmeal cookies with coconut recipe with a picture and simple step-by-step instructions.

  • 50 g Flour 1
  • 0,5 packet Baking powder
  • 80 g Desiccated coconut
  • 40 gr Oatmeal, fine
  • 150 gr Sugar
  • 1 packet Vanilla sugar
  • 1 Egg
  • 70 g Butter, soft
  • 2 tbsp Orange juice
  • 0,5 tsp Cinammon
  • Grated peel of an orange
  1. Add all ingredients one after the other and stir until smooth with the hand mixer. Cover and let the mass rest for 1/2 hour at room temperature. Shape them into walnut-sized balls with lightly floured hands and place them on baking sheets with a large distance between them, they melt during baking and become very wide. Bake the cookies one after the other in the preheated oven at 190 degrees on the 2nd rack from the bottom for about 12 – 15 minutes until golden brown (convection 8-9 minutes at 170 degrees). Remove the cookies from the tray with the paper and let them cool down on the paper.
