Hand cheese tartar

Ingredients for 4 servings:

  • 100 g butter, room temperature
  • 500 g cheese (hand cheese)
  • 3 tbsp mustard, medium hot
  • 4 egg yolks
  • 2 large onions
  • 1 tbsp caraway seeds
  • 1 tbsp paprika powder
  • salt and pepper
  • 1 pinch(s) of cayenne pepper
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place the room-temperature butter in a bowl and whisk until fluffy. Cut the Handkäse into fine cubes, then mash with a fork and add it to the butter along with the mustard and egg yolks. Finely dice the onions and add them to the butter, stirring well. Season the Handkäse tartar with salt, pepper, and cayenne pepper. Sprinkle with the chives, which have been finely sliced. Serve with hearty, fresh farmhouse bread. (A huge thank you to my colleague from Hesse, who allowed me to enjoy this dish.)
