Figs with zabaione

Ingredients for 4 servings:

  • 2 tbsp almond(s) (flaked almonds)
  • 4 large figs (alternatively 8 small figs)
  • 2 egg yolks
  • 6 tbsp dry white wine
  • 1 tbsp lemon juice
  • 1 tsp cane sugar

Toast the flaked almonds in a pan without any fat and then set aside. Carefully wash the figs, pat dry and cut them into quarters or eighths lengthwise, depending on their size. Arrange on four dessert plates. Bring a little water to a boil in a saucepan. For the zabaione, mix the egg yolks with the wine, lemon juice and sugar in a heatproof bowl. Place over a hot water bath and beat with the whisk of a hand mixer for about 5 minutes, heating until light and foamy. The foam must not get too hot, otherwise the yolk will curdle. Drizzle the zabaione spoonful by spoonful over the figs. Sprinkle with the flaked almonds and serve immediately. Tip: If you want an even more intense almond flavor, you can mix 1 teaspoon of almond butter into the egg yolk.
