Bonfire with quark icing

Ingredients for 4 servings:

  • 4 rolls, stale, or old yeast plaited bread
  • ½ liter of milk
  • 1 tbsp sugar
  • 4 m.-sized apples
  • 4 tbsp sugar
  • 2 packets of vanilla sugar
  • 1 tsp cinnamon
  • 250 g quark
  • 1 egg yolk
  • 1 cup sour cream
  • some sweet cream
  • 2 tbsp sugar
  • ½ lemon(s), grated zest and juice
  • 1 handful of raisins
  • 1 handful of nuts, chopped
  • Butter, for greasing the mold and for butter flakes

Working time approx. 25 minutes; Total time approx. 25 minutes

according to my mom’s recipe

Cut the rolls or plaited bread into 1 cm wide slices. Pour hot, lightly sweetened milk over them and let stand. Peel the apples, cut them into 1 cm wide slices, sprinkle 4 tablespoons of sugar, 1 tablespoon of vanilla sugar, and cinnamon on top, stir well, and let stand. Remove the soaked rolls from the milk. Mix the remaining milk with the quark, sour and sweet cream, 2 tablespoons of sugar, 1 tablespoon of vanilla sugar, lemon zest and juice, raisins, and nuts until smooth. Layer the rolls and apples in a greased baking dish, pour the quark topping over them. Place knobs of butter on top and bake at 180°C for 45 minutes. You can easily use up leftovers by replacing the sour cream with sour cream or crème fraîche, or by using more cream. You can also use chopped or flaked almonds/nuts/walnuts.
