Spicy potato noodle pan

Ingredients for 2 servings:

  • 500 g potato dumplings
  • 5 small tomatoes (e.g. cherry tomatoes)
  • 1 pepper, red, hot or mild, as desired
  • 1 mozzarella
  • 1 sausage (e.g. Vienna sausage)
  • 1 tsp, sautéed basil (more if using fresh basil)
  • oil
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

With tomatoes, pepperoni, basil, sausage and cheese

Chop the sausage into small pieces. Heat the oil and fry the sausage slices with the dumplings in a pan. Sprinkle the basil on top. Wash the tomatoes and peppers and trim off the stems. Cut the peppers lengthwise and remove the seeds, as they are extremely hot when bitten into! Then chop both very finely. Don’t forget to turn the dumplings over. Add the tomatoes and peppers to the dumplings. Continue frying and, while they are cooking, cut the mozzarella into small cubes. When the pasta is golden brown, add the mozzarella, stir everything together, season with salt, and serve immediately. Notes: You can of course use large tomatoes, but I find they don’t taste as good. If a whole pepper is too hot for you, you can of course use half or less. The mozzarella can be swapped for a different cheese if you like.
