Nutty fennel salad

Ingredients for 2 servings:

  • 1 bulb(s) of fennel
  • 1 apple
  • 2 tbsp oil (walnut oil)
  • 1 tbsp Balsamic vinegar Bianco or white wine vinegar
  • Salt
  • pepper
  • pine nuts

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the fennel, reserving the green parts, halve them, and slice them very thinly. Also, clean and slice the apple (leave the skin on) and slice it. Thoroughly toss with the dressing made from the finely chopped fennel greens, walnut oil, vinegar, a little salt, and pepper. Let the salad rest for a while. Toast the pine nuts (it’s okay if you like), let them cool slightly, and toss them lightly into the salad just before serving.
