Kohlrabi spaghetti with spinach, tomatoes and olives

Ingredients for 2 servings:

  • 1 spring onion(s)
  • 2 kohlrabi
  • 1 handful of spinach
  • 5 cocktail tomatoes
  • 10 black olives, pitted
  • 1 tbsp olive oil
  • 1 pinch(s) of salt and pepper

Wash and peel the kohlrabi, and spiralize it into spaghetti. Heat a little oil in a large pan or nonstick wok and sauté the finely sliced ​​spring onion. Then add the kohlrabi spaghetti and sauté while stirring. After a few minutes, add the chopped spinach and continue sautéing. Add a little water if necessary. Finally, stir in the quartered cherry tomatoes and the chopped olives. Season to taste with salt and pepper.
