Fried wild mushrooms – fried sponges

Ingredients for 4 servings:

  • 1 kg mushrooms, fresh, cleaned wild mushrooms
  • 3 onions
  • Salt
  • pepper
  • 100 g margarine
  • 50 g butter
  • Parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Pearl mushrooms, porcini mushrooms, chestnut mushrooms, shoemaker’s mushrooms – whatever can be found

Clean the wild mushrooms thoroughly and cut into small pieces (don’t wash them if possible). Dice the onions. Fry the mushrooms in a wide pan with the margarine. The mushrooms will release some liquid for a while. Once the liquid has completely evaporated, add a little more margarine, if necessary, add the diced onions, and fry until the mushrooms are lightly browned. Season with salt and pepper to taste. If you like, you can add a little butter for flavor. Garnish with some parsley and enjoy! We like this best with a simple whole-wheat sandwich!
