Turkey schnitzel filled with feta cheese

Ingredients for 3 servings:

  • 600 g turkey schnitzel
  • 1 pack of sheep’s cheese
  • 1 bunch of spring onions
  • 250 g cocktail tomatoes
  • 100 g black olives, pitted
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 100 ml broth
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Rinse the schnitzels, pat dry, and flatten. Season with salt and pepper. Sprinkle feta cheese on one side of each. Place the other half on top and secure with toothpicks. Prepare the vegetables. Halve the tomatoes. Cut the onions into 3 cm long pieces. Dice the remaining feta cheese. Preheat the oven to 85 degrees Celsius (185 degrees Fahrenheit). Do not use fan/convection oven. Heat butter and oil in a pan and fry the schnitzels for about 3 minutes on each side. Then remove from the pan, place in an ovenproof dish, and keep warm in the oven. Briefly fry the spring onions, tomatoes, feta cheese, and olives in the pan, add the stock, stir everything together, and season with salt and pepper. Return the meat to the pan and let it rest for a moment, then serve. Serve with baguette!
