Low-carb cinnamon stars without eggs

Ingredients for 25 servings:

  • 200 g erythritol (powdered sugar substitute)
  • 350 g almonds, ground
  • 1 tbsp orange juice
  • 4 tbsp water
  • 2 tbsp orange marmalade, sugar-free
  • 2 tbsp cinnamon
  • 100 g erythritol (powdered sugar substitute)

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 15 minutes; Total time approx. 4 hours 40 minutes

Knead all the dough ingredients thoroughly, shape the dough into a ball, wrap it in cling film, and chill for about one hour. Then roll out the dough between two layers of baking paper to a thickness of about 0.5 cm. If the dough is too sticky, sprinkle with some more ground almonds. Cut out stars and place them on two baking sheets lined with baking paper. Let the stars dry at room temperature for about three hours. Preheat the oven to 130 degrees Celsius (260 degrees Fahrenheit). Then bake the cinnamon stars for 15 minutes. Once the stars have cooled, mix the erythritol powder with a little water to form a thick, sticky glaze and brush it over the stars.
