Overnight oats with pomegranate and orange

Ingredients for 2 servings:

  • 60 g oat flakes
  • 40 g soy flakes
  • 1 tbsp flaxseed
  • 3 tbsp nuts, mixed, chopped
  • 2 tbsp raisins
  • 200 ml milk, 0.5% fat
  • 200 ml low-fat yogurt
  • 1 m.-sized orange(s)
  • 1 m.-large pomegranate
  • e.g. cinnamon
  • e.g. sugar, stevia or honey

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 10 minutes

Combine all ingredients, from oats to yogurt, in a bowl, cover, and let sit in the refrigerator overnight. The next morning, peel the orange and cut into small pieces. Halve the pomegranate, remove the seeds and juice, and add everything to the oat mixture. Stir well and season with cinnamon, if desired. If the porridge is too thick, thin with milk; if it’s too runny, add more flakes. Sweeten to taste with sugar, stevia, or honey.
