Turkey breast in green pepper sauce

Ingredients for 4 servings:

  • 800 g turkey breast
  • 50 g butter
  • 1 tsp salt
  • 1 pinch of sweet paprika powder
  • 250 ml meat broth, defatted
  • 125 ml cream
  • 1 tbsp peppercorns, green
  • 3 cl port wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the butter, drizzle it over the meat, rub it with salt and paprika, and sear it all over in a pan. Gradually add the meat broth and simmer with the lid on for about 40 to 50 minutes. Then remove from the pan and keep warm. Add the cream, peppercorns, and port wine to the meat juices, bring to a boil, and reduce by 2/3. Season with salt if necessary. Slice the turkey breast and pour the sauce over it. Serve with pasta or croquettes.
