Quick wholemeal bread

Ingredients for 1 servings:

  • 200 g wheat flour (wholemeal)
  • 200 g spelt flour (wholemeal)
  • 100 g rye flour (wholemeal)
  • 450 ml water, warm
  • 1 packet of dry yeast
  • 1 tsp salt
  • 1 tsp honey
  • 1 tbsp vinegar (sherry vinegar)
  • Pepper from the mill
  • 1 tsp, leveled caraway seeds
  • 1 tbsp flaxseed
  • 2 tbsp sesame seeds
  • 3 tbsp sunflower seeds, shelled
  • 2 tbsp mixed grains
  • 1 tsp spice mix for bread (allspice, clove(s), anise, cardamom) crushed with a mortar

Put all the flour into a bowl, add the yeast, spices, honey, vinegar, and water, and mix well with a dough hook. Knead in the seeds and grains well, reserving 1 tablespoon of sunflower seeds and the seed mixture. Line a silicone loaf pan with the remaining sunflower seeds, fill it with the dough, smooth it out with wet hands, and sprinkle with the seed mixture. This dough does not need to rise. Place in a cold oven, set the oven to 180°C fan/convection oven, bake for 60 minutes, and let cool on a wire rack. Place a small, ovenproof dish filled with water (approx. 200 ml) next to the bread while it bakes. The caraway seeds make the bread easy to digest, so you can enjoy it immediately.
