Ingredients for 4 servings:
- 6 eggs
- 600 g flour
- 400 ml milk (depending on how thick you want the dough, a little more or less)
- 400 g ham
- some salt
- 250 ml milk
- 400 ml cream
- 3 large onions
- 3 small jars of mushrooms
- salt and pepper
- Margarine or oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
For the pancakes, dice the ham. Mix the eggs, flour, milk, and salt into a batter. Depending on how thick you want the batter, use a little more or less milk. Fold the ham into the batter. Fry the pancakes in a pan with a little margarine or oil. Place the finished pancakes on a baking sheet and keep warm in the oven at 50°C. For the sauce, slice the onions and drain the mushrooms. Sauté them together in a saucepan with fat for about 10 minutes. Add 200 ml of cream and simmer until the cream is almost evaporated. Add the remaining cream and the milk and bring to a boil briefly. Season to taste with salt and pepper. If the sauce is too thin, you can thicken it with flour or a light sauce thickener. If the sauce is too thick for you, you can thin it with milk. Remove the pancakes from the oven and serve with the sauce on plates.
