Apricots stuffed with walnuts and goat's cheese

Ingredients for 4 servings:

  • 10 walnuts
  • some lemon balm leaves
  • 10 apricots
  • 100 g goat’s cheese
  • 1 tbsp honey, preferably rapeseed honey
  • 2 vanilla pods
  • 200 ml white grape juice

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly chop the nuts and roast them in a pan without fat for 2-3 minutes. Slice the lemon balm leaves into strips. Halve the apricots and remove the stones. Preheat the oven to 150°C. Mix the cream cheese with honey, then stir in the nuts and lemon balm. Fill the apricot halves with the mixture and bake in the oven for 10 minutes. Scrape out the seeds from the vanilla pods and bring to a boil with the pods in the grape juice. Simmer the juice in an uncovered pan over medium heat until reduced to a syrup. Remove the pods. Serve the apricot halves with the syrup.
