Spicy peach jam

Ingredients for 1 servings:

  • 1.4 kg peach(s)
  • some water, approx. 50 ml
  • 800 g gelling sugar 2:1
  • 50 ml lime juice
  • 50 ml ginger juice
  • ½ tsp, leveled cayenne pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Pit the peaches and cut into pieces. Bring the pieces to a boil with a little water (about 50 ml), stirring occasionally to break up the pieces. When everything is hot, puree the mixture with a hand blender. Add the lime juice and ginger juice, stir in the cayenne pepper, and let it simmer for about 5-10 minutes. Rinse the jars with hot water. Then add the gelling sugar to the peaches and bring to a boil for 4 minutes. Pour the jam into the jars.
