Ingredients for 1 servings:

  • 1,100 g raspberries, fresh or frozen
  • 400 ml coconut milk
  • 500 g gelling sugar 3:1

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Bring the raspberries, coconut milk, and gelling sugar to a boil and continue stirring for about 5 minutes. If desired, stir in coconut flakes. Pour into hot (100°C) rinsed jars and seal immediately. After a while, the lid will create a vacuum, making the jam airtight and shelf-stable.
