Ingredients for 6 servings:
- 1.2 kg quince(s), prepared weighed
- 600 g mango juice
- 2 tbsp lemon juice
- 2 star anise
- ½ cinnamon stick(s)
- 250 g sugar
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour
Place the prepared quinces, peeled, cored, and finely chopped, in a saucepan with the mango juice. Add the lemon juice, star anise, and cinnamon stick. Bring everything to a boil and let it soften slowly. Then remove the anise and cinnamon and puree the mixture with a hand blender. Then pass it through a sieve back into the pan. Add the sugar and bring to a boil again, stirring constantly. Pour into screw-top jars and seal.
