Barley and pepper salad with arugula and ham

Ingredients for 4 servings:

  • 250 g barley, pre-cooked (ready-made product)
  • 750 ml salt water
  • 1 onion(s), red
  • Bell pepper(s), red and yellow
  • 100 g arugula
  • 150 g cooked ham
  • 2 tbsp herb vinegar
  • 2 tbsp rapeseed oil
  • 1 tsp mustard
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Cook the barley in about three times the amount of salted water for 20 minutes. Rinse with cold water and let cool on a baking sheet. Finely dice the onion. Wash the bell peppers and arugula and cut into bite-sized pieces. Dice the ham. Mix the salad dressing with vinegar, oil, mustard, salt, and pepper and mix with the precooked barley, diced bell peppers, and ham. Add the arugula just before serving. 339 kcal per serving.
