Ingredients for 1 servings:
- 1 liter of flowers (fragrant rose blossoms)
- 0.7 liters of water
- 1 kg cherry(s) (wild cherries)
- 1 lemon(s)
- 1 kg gelling sugar 2:1
- 5 packs of vanilla sugar
- 6 cl liqueur (sour cherry liqueur)
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes
with a good shot of sour cherry liqueur
Bring the water and rose petals to a boil and simmer for about 10 minutes, stirring frequently. Once the petals have lost their color, strain the liquid through a sieve. Wash the ripe wild cherries and boil them with the rose petal water for at least 10 minutes, until they begin to shrivel. Strain through a food mill, reserving the liquid and measuring the amount of liquid. Mix with the gelling sugar in a 2:1 ratio. The amount of sugar depends on the cherries and can vary. Add the lemon juice and vanilla sugar, and finally, after the gelling test has been successful, add the sour cherry liqueur. Pour the jam into prepared jars.
